Preparation:
Let's start with a delicious recipe that is not only easy to prepare, but also tastes great! Firstly, we preheat the oven to 180°C fan oven. This is important so that our cake bakes evenly and perfectly. While the oven is heating up, we take a small silicone cake tin with a diameter of 15 cm. This mould is ideal for creating a moist and fluffy cake.
Now let's turn our attention to apricots. These fruity delicacies should be cleaned thoroughly. Then cut them in half and remove the pits. The apricots not only add a pleasant sweetness to our cake, but also provide a juicy texture.
In a separate bowl, mix the almond drink with a fresh egg. This combination provides a wonderful base for our dough. Now we mix the dry ingredients - including flour, sugar and possibly a little baking powder - together carefully and then add them to the almond drink and egg mixture. It is important to mix everything well so that the ingredients are optimally combined and a homogeneous dough is created.
As soon as the dough has reached the right consistency, we pour it into the prepared baking tin. Now for the best part: take the halved apricots and cut them into quarters. We spread these fruity pieces evenly over the batter so that every bite is a flavourful experience.
Now place the tin in the preheated oven and bake the cake for around 40 minutes. To make sure it's perfectly baked, we do the stick test: pierce the centre of the cake with a wooden stick. If it comes out clean, our masterpiece is ready to enjoy!

Tip:
A little insider tip on the side: the cake also tastes great cold! Perfect for a snack between meals or as a sweet temptation with coffee in the afternoon. Enjoy the flavour!
