Ingredients for 2 portions

-Â Â Â Â Â Â Â Â 100 g rocket
-Â Â Â Â Â Â Â Â 1 small red onion
-Â Â Â Â Â Â Â Â 2 tbsp olive oil
-Â Â Â Â Â Â Â Â 1 tbsp balsamic vinegar
-Â Â Â Â Â Â Â Â Salt and pepper to taste
-Â Â Â Â Â Â Â Â Fresh herbs (z.B. Parsley or basil) for the garnish

Preparation
Brown the beef: Fry the fillet of beef in a hot pan with 1 tbsp olive oil for approx. 5-7 minutes until it is nicely browned on the outside. Adjust the cooking time as required (medium rare or cooked through). Then remove the meat from the pan and leave to rest for 5 minutes.
Prepare the vegetables: In the meantime, halve the avocado, remove the stone and cut the flesh into thin slices. Quarter the cherry tomatoes, deseed the pepper and cut into strips. Cut the onion into fine rings.
Put together a salad: Spread the rocket on two plates, then arrange the prepared vegetables and avocado on top.
Cut the beef: Cut the fillet of beef into thin slices and drape over the salad. Garnish with salt, pepper and fresh herbs.
Add the dressing: In a small bowl, mix together the remaining olive oil and balsamic vinegar. Drizzle over the salad and serve immediately.
