Ingredients for 2 people
- 2red peppers
- 3large tomatoes
- 1onion
- 3eggs
- 1tbsp olive oil
- 1tsp sweet paprika powder
- 1tsp oregano
- 1tsp chilli powder
- Salt and pepper
Preparation
1. Wash the peppers, remove the core and chop into small pieces. Peel the onion and chop into small pieces too. Now wash the tomatoes and cut them into pieces.
2. Heat the olive oil in a large pan and add the onions. When they are translucent, add the peppers and tomatoes. Leave to simmer for a while.
3. Then whisk the eggs with the spices and herbs in a separate bowl. The egg mixture can now be added to your simmering vegetables. Mix everything together and allow the eggs to set. If you like, you can serve everything with fresh herbs and flatbread.
VIKING TIP:
If you want to make Menemen vegan, simply replace the eggs with vegan sheep's cheese. You can also use all your favourite herbs.
